This soup is delicious with nice spice. If you dislike spicy food, go light on the chipotle chile. This soup (like many) is very easy to make.
2 avocados, coarsely cubed
1 oz chipotle chile in adobo sauce, finely diced
1 teaspoon ground cumin, plus four very small pinches as a garnish
4 oz red onion, chopped
3 cloves garlic, pressed
salt to taste
18 oz plain yogurt
3 oz fresh cilantro, finely chopped, plus four leaves as a garnish
1 oz fresh lime juice
Puree avocados, chile, cumin, onion, garlic and salt in a food processor. Add yogurt, cilantro and lime juice and continue to mix. Serve in bowls with cilantro leaves in middle of each bowl and a dusting of cumin as a garnish.
Serves four as a starter.
